Toad in a hole!

I find these days that unless the food\meal has a cool name its near impossible to slow my energizer bunny, I mean 4 year old son down long enough to eat. So coming up with creative meal ideas and things that are yummy at the same time as being healthy has become a huge task of mine.

Today for lunch I decided I would combine 2 of my sons favorite foods into something fun.

It's super simple to make and if you add that extra special touch by putting a face on it, its sure to be a hit.

To make all you need it:

a slice of bread
1 egg
frying pan
non stick spray (I use an extra virgin olive oil spray)
a circle cookie cutter (I used a small container)

Cut a circle out of the bread and place it in a greased frying pan. Let the frying pan heat up for a minute or two and then crack the egg into the hole. Cover the pan (I used a pot lid) and let stand till the egg is firm enough to flip. In the meantime toast the small circle. Once both sides have cooked put it onto a plate, decorate with ketchup and serve! I let my son see it then chop it up for him! He gobbled it down without even being reminded to get back to the table!
